Let me know if you need any help working out cheatengine, it can be a bit tricky with the items. The easiest way to make sure it's legit is to just give yourself a few million souls once you get to firelink, then just level up to the stats you want like normal. You can't have 40 endurance at level 1, for example, even though you can do that through cheat engine.
In Dark Souls 1, certain players have a mod called PvP Watchdog that you can use to prevent hackers from interacting with you, but so long as your stats make sense (soul level and current stats are both possible) you don't need to worry about anything. You may be banned on the other two depending on the specifics.
You can not be banned for anything in Dark Souls 1.
